Baking/Cooking With Stevia Instead Of Sugar
- When it comes to cooking with stevia instead of sugar mix all your recipe ingredients as directed and replace the sugar with stevia. Because stevia is much sweeter than sugar, you cannot substitute the same amount of sugar with stevia. So, a cup of sugar should be replaced with either 1 teaspoon liquid stevia, 1 tablespoon concentrated stevia liquid, 1/3 - 1/2 teaspoon stevia extract powder or 18 - 24 single serving packets. For smaller sugar measurements, see the manufacturer's chart on the Stevia label.
- The substitution amount of stevia is lesser than sugar, the recipe requires more ingredients to balance it out. So, for every substituted cup of sugar, you need to add 1/3 cup of liquid or bulk ingredient like, yogurt, applesauce, egg whites, fruit juice or water.
- Mix the stevia with the rest of the ingredients follow the recipe instructions.
Things To Keep In Mind
- As we already mentioned, stevia does not contain calories or cause fluctuations in blood sugar, however many diabetes associations recommend not overdoing it on any dessert products, because other ingredients in the recipe can contribute to blood sugar disbalance.
- Some people can't stand the stevia aftertaste, so it might take some time getting used to it. To decrease this, you can replace only half of the sugar with stevia to get used to and after that replace the whole sugar with stevia.
